I had a free night so I decided to cook.
Like for real.
It's been a while.
So it was steamed little neck clams and Greek orzo salad.

So it was steamed little neck clams and Greek orzo salad.
It was all pretty easy and didn't take that long to make.
Greek Orzo Salad:
Boil 1 cup orzo pasta and drain
Run cold water over pasta
Spread out on foil-lined baking sheet to cool
In a bowl combine orzo with:
3/4 cups halved grape tomatoes,
3/4 cups black olives,
1 cup rinsed baby spinach,
1/2 cup crumbled feta cheese,
juice of half a lemon,
1/3 - 1/2 cup vinaigrette dressing
(I used roasted red pepper Italian dressing)
salt & pepper to taste
Cover with foil from baking sheet and chill for a few hours
Steamed Little Neck Clams:
Soak clams in generously salted water for 15 minutes
Drain, rinse and soak again in new salt water for 15 more minutes
Drain, rinse
In a large pot add 2 Tbsp oil on Medium High heat
Add 1 cup onion, diced
Add 3 cloves of garlic, minced
Saute for 1-2 minutes
Add clams
Add 1/4 cup white wine
Sprinkle parsley, salt & pepper
Stir, reduce to low-medium and cover to steam for 10 minutes
Sauce:
Remove clams from pot
Add 2 Tbsp butter
Add juice of half a lemon
While stirring, turn heat up to Medium High or until sauce bubbles
Turn off heat
Pour sauce over clams
Enjoy!
